Malika e Hind 1121 basmati rice belongs to the longest-grain basmati variety in the world, measuring between 8.3 and 9 mm before cooking and able to triple in volume once cooked, giving fine, light and well-separated grains. Sourced from India, it releases a delicate aroma that fills the kitchen as soon as the bag is opened. In the Comoros, rice is the base of every meal, the wali served with fish, meat or everyday sauces, but this basmati also earns its place at bigger occasions: wedding biryani, madjliss pilaf or a festive dish for breaking the fast. It comes in a 1 kg bag, handy for trying the variety, up to a 20 kg bag suited to large families and shops that resell it by the kilo. Before cooking, rinse the grains until the water runs clear for an even lighter result, and store the rice in an airtight container, away from moisture.
