Mutish tomato paste

Description

Mutish tomato paste, pure and natural, free from additives and preservatives, at a 22 to 24 percent concentration that gives sauces real body and colour. Its dense texture and deep ripe-tomato flavour make it the base for slow-cooked dishes: rougail, rice sauces, meat and fish stews, soups and everyday one-pot meals. In Comorian cooking a single spoonful is enough to give substance to m'tsolola or to a sauce served alongside basmati rice, lifting a dish while using very little product. Fry it briefly in hot oil with onion, garlic and spices to release its aroma before adding any liquid. Once opened, keep the tin refrigerated in an airtight container and use it within a few days, or freeze the surplus in portions.
