Vegetable ghee is a plant-based clarified fat that reproduces the culinary qualities of traditional ghee (clarified butter of animal origin). Made from hydrogenated vegetable oils or a blend of vegetable fats, it withstands cooking temperatures above 200 °C without burning or smoking. Solid at room temperature and neutral with a light buttery note, it is a natural fit for pan-frying, Middle Eastern pastries (halwa, basbousa) and rice dishes. Widely used across East Africa and the Indian Ocean, vegetable ghee is often preferred for religious (kosher, halal), dietary or economic reasons.
